Fish Dish

4 fillets white fish

2 tablespoons butter

2 tablespoons flour

2 cups milk

dash of pepper

1/2 teaspoon salt

dash of paprika

1 tablespoon chopped parsley

1 cup grated cheese

Melt butter; add flour; then slowly add milk to make sauce. Cook mixture until thick. Add pepper, salt, paprika, parsley, and cheese. Put the fish in buttered baking dish and top with sauce.

Cover and bake in a moderate oven (350º) for half an hour or until fish flakes at touch of fork. Uncover and slightly brown.

Taka Kau
(Single Man’s Bread)

1 cup flour

1 tablespoon butter

1/4 cup plus 2 teaspoons water

Mix ingredients into a very firm dough. Knead together and roll dough out until extremely thin. Cut rolled dough into little squares. Prick with a fork or toothpick. (You could make your initials on them.) Bake in hot oven (475º) for 7 to 10 minutes. Serve warm with lots of butter.

Shortbread

1/2 pound butter

4 heaping tablespoons sugar

2 heaping cups flour

Cream butter and sugar well. Add flour gradually. Knead dough to blend mixture well. Place kneaded dough on floured board and shape like a log. Cut into 1/2-inch slices. Place each slice on a lightly greased baking sheet and press lightly with a fork before baking. Bake for one hour at 225º but do not brown.
