Preparing and eating a meal made from some of the ingredients that might have been used during Book of Mormon times can be a good learning experience as well as a lot of fun. With the help of an older person, you can prepare and serve these recipes to your family. Maybe for a family home evening, the whole family could participate in preparing the meal (or just one recipe), eating it, and discussing the Book of Mormon.
1 package (11 ounces/312 g) corn tortillas
Your choice of toppings: butter, cheese, or your favorite taco ingredients
Heat a dry frying pan over medium high heat. With an egg turner, carefully place one tortilla in the pan and cook 1–2 minutes—until it bubbles and is light brown on the bottom; turn it over and cook about 1 minute longer. Repeat this procedure with the remaining tortillas, stacking and covering them with a towel to keep them warm and soft.
Serve the tortillas with your choice of toppings.
4 cups frozen corn, thawed
2 eggs, beaten with a fork
1 teaspoon flour
1/4 teaspoon salt
3 tablespoons melted butter/margarine
1 cup shredded cheese
In a medium bowl, mix the first five ingredients together.
Coat the sides and bottom of an 8″ (20 cm) square baking pan with the melted butter/margarine.
Pour half of the corn mixture into the pan, then cover with half of the shredded cheese. Carefully spoon on the remaining corn mixture and top with the remaining cheese.
Bake at 350° F (175° C) for 30 minutes or until the top is light brown and bubbly.
6 bananas, peeled and sliced lengthwise
1/2 cup melted butter/margarine
1 cup cream cheese, softened
1/2 cup packed brown sugar
1/2 teaspoon cinnamon
1 cup coconut cream or heavy cream
In a buttered 9″ (23 cm) square baking pan, place half of the bananas, cut side up and side by side. Pour the melted butter/ margarine evenly over the top.
Mix together the cream cheese, brown sugar, and cinnamon.
Spread half of the cream cheese mixture on the bananas in the pan. Place the remaining bananas evenly on top of the cream cheese. Spread the remaining cream cheese mixture on these bananas. Then cover with coconut milk or heavy cream.
Bake at 375° F (190° C) for 20 minutes or until bubbly (watch closely). Serve hot.
2 cups crushed ice
3/4 cup sliced fruit of your choice: watermelon, strawberry, or mango mixed with banana is good
2 teaspoons sugar (adjust to taste)
Place all the ingredients in a blender and blend until smooth. Makes 2 servings.
