Recipes from the Philippines

Banana Toron

Slice bananas lengthwise and also crosswise. After putting a little brown sugar inside, wrap pieces of banana in lumpia wrappers (these can be bought at Chinese grocery stores, where they might be called egg roll or spring roll wrappers; if wrappers are not available, the bananas can be fried in oil and sugar unwrapped) and seal with a little flour and water.

Heat some oil in a frying pan and add more brown sugar to the hot oil. Fry bananas in oil until wrappers are lightly browned. Then remove and drain on a paper towel.

Lumpia

Cut any kind of meat, shrimp, and cooked vegetables into very small pieces. Mix together with a little soy sauce. Wrap mixture in lumpia wrappers and fry in hot oil. Dip in soy or meat sauce before eating.

Adobo

Cut pork loin or chicken into small pieces.

Mix together 1/4 cup soy sauce, 1/2 cup vinegar, and a little water. Season with garlic powder and black pepper. Pour mixture over meat and bring to a boil. Simmer for about 2 hours until tender.
