Tips for Young Cooks

1. Make a list of everything you need to have on hand for each recipe.

2. When you prepare this supper, make tuna boats first, wrap in foil, and refrigerate. Wash tomatoes, cut out stem area, and chill in refrigerator. Spread chips on baking sheet, sprinkle with barbecue salt, and set aside.

3. About an hour and a half before dinner, prepare the cobbler. Put it into oven to bake one hour before serving.

4. Put tuna boats into oven during last 30 minutes cobbler is baking.

5. Set table early so you won’t have to do it the last minute.

6. Arrange salad on each dinner plate and place on table. Remove tuna boats and cobbler from oven, turn heat off, and place baking sheet with potato chips into oven to heat while everything else is being put on table.

Tuna Boats

1 can (about 7 ounces) tuna, drained

1/2 cup chopped celery

1 tablespoon sweet pickle relish or chopped sweet pickle

1/2 cup grated cheddar cheese

1/4 cup mayonnaise

6 hot dog buns

1. Preheat oven to 350º.

2. In salad bowl combine tuna, celery, relish, cheese, and mayonnaise thoroughly with fork.

3. Split hot dog buns and butter. Spread tuna filling evenly on bottom half of each bun. Replace top half.

4. Wrap and seal each tuna boat in aluminum foil. Place in oven for 30 minutes. Serve hot.

Stuffed Tomato Salad

2 cups cottage cheese

1/4 cup chopped chives or green onions

1/4 cup mayonnaise

1. Mix cottage cheese, chives, and mayonnaise in a bowl and set aside.

2. Wash chilled tomatoes (one per guest), place stem down, and cut in two almost to the bottom of each tomato. Then turn knife and cut as before to make four equal sections.

3. Spread tomato sections apart, salt lightly, and fill with cottage cheese mixture.

4. Serve on crisp lettuce or salad greens.

Barbecued Potato Chips

1. Spread potato chips on baking sheet.

2. Sprinkle with barbecue salt and place in a 350º oven for 2 to 3 minutes. Serve immediately.

Old-Fashioned Peach Cobbler

1/2 cup (1 square) butter or margarine

2 cups flour

1 1/2 cups sugar

1 tablespoon baking power

1 1/2 cups milk

1 quart or 1 can sliced peaches and juice

1. Preheat oven to 350º.

2. Place butter in 9″ x 13″ cake pan and melt in oven, watching carefully so it does not turn brown.

3. In mixing bowl stir together flour, sugar, baking powder, and milk.

4. Stir dry ingredients into pan with melted butter and add milk. Spread batter evenly in pan.

5. Put sliced peaches and juice over batter.

6. Bake for 1 hour and serve with milk, cream, or ice cream.

Guide to Good Eating

1. Every day eat one or two servings of meat, poultry, fish, or eggs. Dried beans or peanut butter can be substituted for one serving.

2. Drink several glasses of milk every day. Ice cream and cheese are also important foods.

3. Eat four or more vegetables and fruits each day. A citrus fruit such as an orange, grapefruit, tangerine, or the juice from these fruits should be included in your diet. A green or yellow vegetable is also needed each day.

4. Every day, eat four servings of enriched or whole grain bread or cereal.
